How to Properly Sterilize WECK Jars

WECK jars have become a benchmark for anyone making homemade preserves, fermented foods, jams, sauces, or even gourmet food presentations. Their distinctive sealing system, consisting of a glass lid, rubber gasket, and stainless steel clips, offers a reusable, safe, and sustainable solution for food preservation.

 

However, to ensure safe storage and maximize the shelf life of your food, it is essential to prepare the jars correctly before use. In this guide, we explain how to sterilize WECK jars step by step and highlight the key points to keep in mind for the best results.

Is It Necessary to Sterilize WECK Jars?

The answer depends on the type of food preparation you are making.

If the food will undergo a preservation process lasting more than 10 minutes (such as many water-bath canning recipes), the jars will be sterilized during that process.

 

However, they should always be thoroughly cleaned before filling.

 

For jams, jellies, and other preparations processed for less than 10 minutes, pre-sterilizing the jars is highly recommended.

 

Before You Start: Inspection and Cleaning

Before sterilizing any WECK jar:

  1. Wash the jars, glass lids, rubber gaskets, and clips with hot soapy water. 
  2. Rinse thoroughly to remove any residue. 
  3. Check the glass for cracks, chips, or other damage. 
  4. Inspect the rubber gaskets to ensure they are in perfect condition and free from deformation. 

Method 1: Sterilizing with Boiling Water

This is the most commonly used and recommended method for home canning.

Step 1: Place the Jars in a Pot

Position the empty jars upright in a deep pot. Fill the pot with hot water until the jars are completely submerged, leaving approximately 2–3 cm (1 inch) of water above them.

Step 2: Bring the Water to a Boil

Once the water reaches a rolling boil, maintain the boil for 10 minutes. At higher altitudes, a slightly longer boiling time may be necessary.

Step 3: Sterilize Lids and Gaskets

The glass lids can be sterilized together with the jars.

The rubber gaskets should be placed in very hot water, but prolonged boiling should be avoided, as excessive heat may reduce the lifespan of the natural rubber over time.

Step 4: Remove and Dry

Using clean tongs, carefully remove the components and place them on a clean towel or drying rack until ready to use.

Method 2: Sterilizing in a Dishwasher

If your dishwasher has a high-temperature or sanitizing cycle, it can be a convenient alternative.

  1. Place the jars and lids in the dishwasher. 
  2. Select the hottest available cycle. 
  3. Leave the jars inside until you are ready to fill them so they remain warm. 

Although this method is convenient, boiling-water sterilization is generally considered more reliable for sensitive food preservation applications.

How to Properly Fill WECK Jars

Once sterilized:

  • Fill the jars while they are still warm. 
  • Avoid sudden temperature changes between the jar and the food. 
  • Place the rubber gasket around the rim. 
  • Position the glass lid and secure it with the metal clips. 
  • Proceed with the preservation process specified in your recipe. 

Common Mistakes to Avoid

- Sudden Temperature Changes

WECK glass is highly durable, but thermal shock can cause breakage. Do not place hot jars on cold surfaces or pour boiling liquids into cold jars.

- Using Worn-Out Gaskets

The rubber gasket is essential for creating an airtight seal. Replace it if it shows signs of wear, hardening, or deformation.

- Sterilizing Jars in the Oven

Although this practice is relatively common, many food preservation experts do not recommend oven sterilization because it is difficult to ensure uniform heating and may increase the risk of glass damage.
